The Mom and Dad Express

I had heard of some parents trying to recreate the Polar Express by doing train rides and such. And yes we did a train ride with Santa this year, but I never thought to call it The Polar Express. My children have a fascination with Christmas lights, just like their momma, and have enjoyed other times we have briefly driven around at night. I came across a recipe for Polar Express hot chocolate, and thought to myself, why not make it for the kids and drive around looking for lights? Better yet, why not have their elf involved in this too? So I created the Mom and Dad express, courtesy of Buddy the Elf.

In a crockpot mix together 2 cups of bittersweet chocolate chips, 1 can of condensed milk, 1.5 cups of heavy cream, and I cut it down to 5 cups of milk. Let it cook for about 3 hours on high, and you have the best tasting hot chocolate. I also made a homemade chocolate whipped cream to go on top.

While Daddy did bath time, I went downstairs to warm up the car, and placed a ticket in Buddy's arms that had a drawing of a car and a tree. On the back I put a note along the lines of the car is warm, the hot cocoa ready, put on your pajamas and lets find some lights! Excited is not even what Pierce was. He was BEYOND excited and eventually thanked Buddy for the amazing trip.

Carter fell asleep in the car, but Pierce stayed up enjoying every single light display we could find. It was truly amazing being a kid again and searching for lights while hearing and seeing his face light up. I could not have asked for a better night. I love you boys so very much, and thank you for showing me what it is like to be a kid again.  :)
